During the summer, every fourth Friday, we host our friends for cheeseburgers and games. The deal is that FL makes the burgers, I make dessert and everyone else brings…something. We usually end up with a mix of things, from side dishes and desserts to whole pizzas to butter mints. It’s delightful.

Yesterday, everyone brought cake. And while I am not one to turn my nose up at ANY cake, we suddenly look like a boutique bakery. Which, considering that Richard is on a fitness quest, FL is on a GLP-1 and I am endeavoring to stay where I was two years ago—plus or minus three pounds—is a bit of overkill.

Possible that we will freeze some of them? I know my parents buy huge sheet cakes from Sam’s and freeze them so they can hack my dad off a chunk when he’s got a craving, and my mom doesn’t have to bake.

My contribution was a white Texas sheet cakes, which is a recipe with a pound of butter, a quart of sugar and just enough eggs and flour to hold it together.

I caramelized some almonds and put them on half. Thought I would like the crunch.

So, really not a health food. But so good.

The other cakes were chocolate, red velvet and strawberry, so at least we have a variety.

And now, it’s time for a nap, but before we get to that, here’s the good stuff:

I was crazy busy yesterday with party prep so I only read five pages. Just enough to not break my reading streak. I did meditate for 30 minutes, went to group, took a shower, baked a cake from scratch and candied almonds, so I will give myself a break on that. I’m grateful for my friends, some of whom drive an hour or more to have a cheeseburger with me. They are the best.
