For the last few weeks, i have been on a quest to cook new things. I made an omelet casserole with a biscuit crust, and something called “Marry Me Chicken” both of which are going in regular rotation. I also made that viral Crescent Roll bread, which was tasty but far too expensive to do again.

I forgot to take pictures of any of that, but I promise you that they happened.

For Cheeseburger Friday this week, I made a white Texas sheet cake, with a candied almond topping on half, which meant that I needed to learn how to candy almonds. Spoiler alert: It’s stupid easy.

Four minutes. One c slivered almonds. Quarter cup of sugar. Stir constantly in a pan for four minutes, then slide onto parchment to cool. That’s it.

And last night, Kevin and I made chicken fried rice.

Not as good as Izumi Hibachi, but damn.

I guess the point of all this is that I am apparently gastronomically bored. And finally above water enough to cook.

Now, I don’t want to put all the credit on the meditation, but how can I not remember how much better my life is when I commit to regular practice? I get…interested in life, in a way that I am usually not. It’s nuts, and I’m leaving this here as, well…not a reminder, exactly, but as a ‘stop being an idiot and meditate’ for a future Lori who has let it fall by the wayside. Again.

I’m back to doing 25 minutes of TM in the morning, and I have been experimenting with a Daily Calm before that, to get my head in the right space first. I think it makes the TM more effective, plus I do LOVE me some Tamara Levitt.

Also, I bought a new appliance, a combination rice/grain/bean cooker, so there will be bean experiments (and maybe grain experiments) forthcoming. Thinking about some red beans and rice later this week. Kevin has requested andouille. We already made rice and oatmeal in it, and both were perfect, so I am encouraged.

So, meditation more=cooking more=less boredom. Check.

Now, I have a library book to start, but before that, here’s the good stuff—

Yesterday, I meditated for 35 minutes, read 320 pages, and made something new for dinner. I was extra grateful for my husband, for stirring the rice when I could not, and for mindfulness for apparently giving me enough energy to do…well, anything, really. It was a really good day.
